Designed to showcase cornbread’s historic roots, @indianolahtx’s Iron Skillet Cornbread pays homage to Hopi Blue Corn and its prevalence in frontier-era Texas kitchens while also putting its Modern Texas touch on the dish.

A perennial guest favorite at the Houston restaurant, the cornbread remains on the menu year-round but rotates flavorful additions with the seasons. In honor of late spring, it is currently topped with Hopi Blue Cornmeal, TX Ruby Red Grapefruit, Jalapeno Onion Creme, Dill, Beluga Lentils, and spiced @steenssyrup.

🐖Calling all barbecue fans! Dates for the South 🐖Calling all barbecue fans! Dates for the Southern Foodways Alliance’s (@southfoodways) annual Fall Symposium have just been announced. Each year, the SFA explores a new subject about the changing South (and throws a damn good party) in Oxford, MS. This year’s event, taking place October 21–22, will focus on what barbecue is, who makes it, and how the craft is changing at the culmination of their year-long exploration of barbecue.

Tickets go on sale in early August, but you can get your fill of ‘cue now through batches of their podcast (@thegravypodcast), oral histories, documentary films, recipes, and more over at @southfoodways.
