Chefs Emil David and Drake Aldrich of @persorestau Chefs Emil David and Drake Aldrich of @persorestaurant wanted their recent collaboration dinner with Louisville icon Chef Kathy Cary to make an impact while they honored her contributions to the city’s culinary landscape. So they built the night around a cause close to her: @westendschool, a tuition-free boarding school for young men in Pre-K through 8th grade where Chef Kathy volunteers regularly.

The evening beautifully reflected Chef Kathy’s lasting impact on the city while creating something entirely new for guests. It started with cocktails on Perso’s garden patio before everyone sat down to a special menu drawn from Lilly’s Bistro—her famous Louisville restaurant that ran 46 years before closing in 2020. And every dollar from ticket sales went straight to the school.

When we suggested the collaboration and connected Perso with West End School, we hoped it might turn into something like this. The chefs and Kathy did the rest. Proud of the @persorestaurant team.

Opening a restaurant is an achievement. Staying relevant, beloved, and busy for a decade or more is something else entirely. In an industry this challenging, longevity is earned through great hospitality, a loyal following, and truly becoming part of your community.

Owner Shun Love and daughters Ashley Jackson and Amber Diamond have built a concept that’s unlike anything else in the city, blending Japanese and Southern traditions through izakaya-style dining and the city’s most in-demand omakase experience.

With dishes like yellowtail sashimi with Alabama peaches and collard green gyoza with smoked turkey, the menu is as unique as the story behind it.

It’s clear Birmingham is loving what @johinnabhm offers—expansion is already underway! Shun, Ashley, and Amber are adding lunch and Saturday brunch menus, all while opening a new cocktail bar next door named Obsidian.
